There are two main types of microphones used for recording: omnidirectional and unidirectional. The former records sound from all directions while the latter only picks up the sound from one direction. If you want a mic that doesn’t pick up ambient noise, a unidirectional mic is your best bet.

That leads us into controlling your environment. When recording audio, you’ll want to reduce the noise around you as much as possible. While it’s very difficult to achieve complete silence, you can turn off all other machines in the room and try to keep the microphone away from any noise producers.
